The ingredients needed to make Mango Achar:
  1. Make ready 3 kg raw Mango
  2. Get 200 grm coriander whole
  3. Prepare 150 grm zeera
  4. Prepare 120 grm red chilli powder
  5. Make ready 60 grm kashmiri red chilli powder
  6. Take 100 grm kalwanji
  7. Take 300 grm fennel seeds (saunf)
  8. Get 50 grm Methi dana
  9. Take 150 grm Rai
  10. Prepare 50 grm haldi powder
  11. Get 15 grm Hing powder
  12. Take 200 grm rock salt (black salt)
  13. Get 50 ml vinegar
  14. Prepare 1 kg mustard oil
Instructions to make Mango Achar:
  1. Add 1/2 kg oil add all ingredients except salt and vinegar.
  2. Stir fry keeping mixture just wet for 2 minutes.
  3. Add Keri / raw Mango cook for 5 to 7 minutes till mango become soft.
  4. Add vinegar and remove from flame add 1/2 kg oil and set aside.
  5. Allow to cool and store in jar or bottle.
  6. Ready to eat.
