Aam ki launji / Raw mango chutney prepared in the northern regions is its close cousin. Growing up , my mom used to prepare this every year in the mango season and it would be over in no time.
Instructions to make Raw mango murabba:
- Rinse the mangoes in clean water peel it.
- Poke the mangoes with fork thoroughly.
- Cut the mangoes in round shape.
- Take a bowl of water,add salt or lime stone in the water.
- Mix it, after mixing salt in the water add all the slices of mango to this bowl.keep it soaked for 2-3 hours.
- After 2-3 hours take out the mango slice and rinse in water thoroughly. risne it 2-3 times in water.
- Take a saucepan and put water it in.let the water come to boil.add the mango slices, keep the mangoes in boiling water for 4-5 minutes.
- Turn off the flame, drain the mangoes.
- In a large pot,add sugar and a cup of water boil it.
- When sugar syrup starts boiling,add the mangoes.keep the flame medium to medium high and keep stirring.
- When the sugar syrup has the consistency of honey,add saffron.
- After adding saffron turn the flame to low and cook it for another 1-2 minutes.
- Add cardamom powder and pinch of salt mix well and turn off the flame.
- Cover the pot and let it sit for 7-8 hours.
- Mango murabba is ready.
- Put it in jar or serve it.
