Melting Moments are a shortbread cookie that is coated with powdered sugar after baking. They are a popular Christmas cookie, maybe because they look like little snowballs. I recieved some Melting Moments in a Christmas cookie exchange last year and loved them. The texture of these cookies isn't as good but I still liked them.

Instructions to make Melting moments:
  1. Preheat the oven to 180 ° C. Prepare a baking tray with baking paper and set aside.
  2. In a bowl, using electric beaters, beat the softened butter with icing sugar and vanilla essence until smooth and creamy.
  3. Sift the cornflour and flour into the mixture and combine into a dough.
  4. Take a spoonful of the mixture about 3 or 4 centimeters wide and roll into a ball in your hand. Place on the baking tray and press down with a fork so it flattens to about 1.5 cm thick.
  5. Once your tray is full, bake in the oven for 15 minutes.

  7. For the filling : in a bowl, beat the butter and icing sugar. Add the passion fruit and combine. Taste the filling and add more passion fruit if you like.
  8. Spoon a teaspoon of filling onto a biscuit and sandwich onto another biscuit. Enjoy with coffee or tea! Store in an air tight container.
