  1. In a large bowl using a hand mixer or a stand mixer fitted with the paddle attachment, beat the butter on medium speed for 1 minute or so until smooth and creamy. Add the granulated sugar and brown sugar and beat on medium-high speed until fluffy, then beat in the egg, vanilla and peppermint extracts. Scrape down the sides and the bottom of the bowl as needed.
  2. In a separate bowl, whisk together the flour, cocoa powder, baking soda and salt until combined. On low speed, mix the dry ingredients into the wet until fully combined, then switch to high speed and beat in the mini chocolate chips.
