  1. Prepare long grain rice
  2. Get Vegetable oil

Instructions to make Mirepoix Rice:
  1. First things first. Put your rice in a bowl and rinse it. If you have a fine China allow water to run thru the rice until the water is clear.
  2. Small dice your mirepoix to the best of your abilities
  3. Medium Heat on the stove. Place your pot(preferably hard bottom). Add oil and butter then your Mirepoix. Onions and carrots first then celery. Keep that Spatula moving! Don’t forget your 4oz of salt.
  4. Remove rice from water and add to mirepoix. Stir rice for 3 minuets. Add 8 cups of cold water. Bring rice to boil. Keep the stove burner on medium heat. Keep uncover until all of the water is evaporated. This process will take 15 to 20 mins
  5. Once water is evaporated. Remove from heat and cover. Allow rice to sit for a minimum of 30 mins. Grab a fork and move your rice around. Plate serve and enjoy!
