The ingredients needed to make Piri Piri Chicken Tikka:
  1. Prepare 500 gm boneless chicken, cut into 2-3 inch pieces
  2. Get 1/4 cup yogurt
  3. Take 1 tbsp ginger-garlic powder or paste
  4. Make ready 1 tbsp paprika powder
  5. Take 2-3 tbsp Piri Piri spice mix (I have used Keya's Piri Piri instant multi-purpose spice mix)
  6. Make ready 20 gm or 1 cube processed cheese, grated
  7. Prepare 1 tsp corn flour
  8. Get 2-3 tbsp fresh cream
  9. Get 1 tbsp oil
  10. Get to taste Salt
  11. Make ready as needed Melted butter, for basting
  12. Prepare 1-2 tbsp fresh coriander leaves, finely chopped (for garnish)
  13. Take as needed Onion rings (for garnish)
  14. Get as needed Mint-Coriander chutney (for garnish)

It's usually grilled and charred whole chicken pieces covered in a chili based paste or sauce. I have no idea what's on the menu at the (highly recommended should you find yourself in the Algarve) Teodósio O Rei Dos Frangos, we never even read it, but on every table there was a pile of grilled chicken, fried potatoes and a tomato onion. Steps to make Piri Piri Chicken Tikka:
  1. In a large mixing bowl, add yoghurt, ginger-garlic powder, paprika powder, Piri Piri spice powder. Mix everything nicely.
  2. Add grated cheese, corn flour, salt, fresh cream and oil. Mix well.
  3. Add the boneless chicken pieces. Coat well with the yogurt mix. Marinate for 1 hour in the refrigerator.
  4. Preheat oven to 180-degree Celsius for 10-15 minutes. Line a baking tray with foil and grease it with butter.
  5. Place the chicken pieces on the tray and bake for 20 minutes. Bast with melted butter once it starts browning.
  6. You can also cook them in a skillet or pan. Just heat some oil in a pan over medium heat. Add the chicken pieces and cook each side for 5-7 minutes or until it gets a golden colour.
  7. Sprinkle freshly chopped coriander leaves and serve hot with onion rings and mint-coriander chutney. Enjoy!

This oven-roasted chicken can also be spatchcocked and barbecued. If you don't like it too hot, adjust the amount of chillies in the piri-piri marinade. Add half the piri-piri sauce, spreading it evenly over the chicken. Seal and marinate in the refrigerator for at least one hour. Because this Piri Piri Chicken is fiery hot.
