Baileys ice cream is rich, sweet and boozy. I love adding alcohol to ice cream because the freeze point lowers and it's very creamy and easy to scoop regardless of how long the ice cream sits in the freezer. The only negative, if you can call it that, is that it melts a bit faster.

The ingredients needed to make Baileys Icecream:
  1. Make ready 1 cup heavy cream or double cream or thicken cream
  2. Prepare 50 g condensed milk
  3. Make ready 30 ml Baileys
  4. Make ready 1 tsp vanilla extract
  5. Prepare 50 g raisin (optional)
  6. Prepare 30 g chocolate chips (optional)
  7. Take 1 ziplock bag

Process custard according to the ice cream machine manufacturerâ  s directions. The ice cream will have a soft, creamy texture. Transfer the ice cream to an airtight container, cover ice cream directly with plastic wrap to prevent a skin from forming and place in freezer. I LOVE Baileys so when I got my own ice cream maker I went looking for a recipe to make Baileys ice cream!

Steps to make Baileys Icecream:
  1. In a mixing bowl, beat the cream until soft peak.
  2. Fold in baileys, vanilla, raisin, chocolate chips & condensed milk and swiftly until well mixed. Transfer to your desired container. Put it in a ziplock bag. Keep in freezer for at least 5 hours or preferably overnight.
  3. To serve, allow the ice cream to sit for a few minutes at room temperature, wet an ice cream scoop and spoon into dishes, scoop onto cones, or eat straight from the container like I typically do.

To my horror after an extensive search I could only fine one so I came up with my own. It takes a little longer than normal ice cream to completely freeze but that's because of the alcohol, but it's worth the wait! I love putting Baileys over ice cream and this was a nice idea to add some pretzels to give it that salty sweet combo and some crunch. I think chocolate covered pretzels would be perfect but I didn't have any. I used coffee flavored ice cream (which was awesome) and added some whipped cream and chocolate sprinkles.
