Gizdodo is the combination of plantains and Gizzards (chicken Gizzards) and Plantains mixed in Gizdodo is a delicacy you will find in parties because it's a simple dish that delivers great flavor with. Gizdodo - Aromatic Stewed chicken gizzard and plantains infused with herbs, bell-peppers -easily replace with chicken thighs. Growing up in Africa, we ate every part of the chicken except the bones. Gizdodo is an increasingly popular dish in Nigerian homes and parties.
Instructions to make Gizdodo & Veg stir fry:
- Boil gizzard with salt, chopped red onions and seasoning cubes. Cut into bite size pieces and fry.
- Dice and fry your plantains in the same oil used to fry the gizzards.
- Chop your veggies, tomatoes and chillies.
- Take out some of the oil used to fry your gizzards/plantains and pour into a pan. Add Curry powder, thyme and fry for a minute.
- Add chopped tomatoes and chillies to the oil and fry for a few minutes.
- Add your gizzard pieces, turn down the heat and cover so the gizzard can absorb all the flavours in the pan.
- Once sauce has thickened, add your fried plantains, chopped veggies and fry some minutes.
- Season to your taste and Turn off heat.
- Garnish with chopped spring onions and serve with white rice….. Yum!
