- Depending on how thick you like soup, you may need to add more hot water/stock.
- Blend until smooth, (season with salt and pepper if required) and serve.
I make this soup with lentils, carrots, turmeric, and fresh lemon whenever I'm in need of some healthy comfort food. Lentils — I use brown, red, or French lentils to make the soup and add them uncooked. The lentils cook up to be soft, plus I love the nutritional benefits of lentils.
