Bring water and salt in a pan to a boil. Heat a tablespoon of butter in a skillet and add the asparagus. Alternatively, you can cook them a little longer on medium high heat. Season asparagus stalks and lay out on a creamy Mascarpone base in one direction.

- Divide into individual ramekins. Add more Parmesan on top. Bake at 200 for about 25 mins :)
Lay out the other half in the opposite direction. Remove the pancetta from the pan and set aside. Add the onions, shallots and garlic. Bring the mixture to a boil and add the asparagus and spinach. Cook the asparagus in boiling water until tender, then drain and let cool.
