- Make ready 500 gm hara kaddu (may cook without peeling also)
- Prepare 1-2 tbsp mustard oil
- Take Pinch Kasuri methi
- Get Pinch jeera /cumin seeds
- Take 3-4 garlic cloves grated
- Prepare 1 inch ginger grated
- Take to taste Salt
- Get 2-3 green chilli chopped finely
- Prepare 1/2 tsp haldi(Turmeric) powder
- Prepare 1 tsp dhania(coriander) powder
Instructions to make Hare Kaddu ki Sabzi:
- Take a wok, add oil, heat it.
- Add methi dana & zeera, let it splutter.
- Now add ginger garlic, saute it till light brown at moderate heat.
- Add green chilli, stir it. Add washed kaddu, increase the flame, stir fry it for a while.
- Add salt, haldi powder & dhania powder. Stir fry it for a while.
- Lower the flame now, cover it with the lid, cook it until tender. Do not stir much.
- Open the lid now b, increase the flame, stir fry it till kaddu turns light brown.
- Take out in a serving bowl, garnish it with chopped dhania patta.
- Have it with paratha or puri.
