  2. Take 250 grm boiled jackfruit
  3. Make ready 1 tsp termeric powder
  4. Take 1 tsp salt

  6. Get 1 tbsp coriander seeds
  7. Take 1 tbsp carom seeds
  8. Make ready 1 tbsp cumin seeds
  9. Take 1 tbsp fennal seeds
  10. Make ready 1 tbsp yellow mustard seeds
  11. Take 10-12 dry red chillies
  12. Get For achar :-
  13. Make ready 1 cup oil
  14. Take 1 tbsp salt
  15. Take 1/2 tbsp black salt
  16. Take 2 tbsp red chilli powder
  17. Prepare 1 tbsp kalaunzi
  18. Take 1 tsp asafoietida

This Kathal ka achar/ jackfruit pickle is my grandmothers specialty and my mom learned from her and making it regularly. do try this pickle and give me your feedback how it turn out for you. Steps to make Jackfruit Pickle:
  1. In a bowl add boil jackfruit in a sauce pan for only 5-6 min.strain the water completely.and leave jackfruit to dry up.you might have to pat it dry.add termeric powder and add salt mix it well properly.when cool and dry.
  2. Now take a tawa add coriander seeds,add carom seeds,add cumin seeds
  3. Add cumin seeds,add dry red chillies and add yellow mustard seeds.now dry roast all ingredients for 5-6 min.now take a jar and put all the dry ingredients into the jar.
  4. Now grind it and make a smooth powder.achar masala is ready.now take a mixing bowl add marinated jackfruit add vinegar
  5. Mix it well.add achar masala powder mix it again.now coat all masala over the marinated jackfruit.
  6. Add mustard oil pour into the jackfruit mix it again.add kalaunzi
  7. Add red chilli powder,add salt,add black salt,add asafoietida
  8. Mix it again.take a jar and fill the jar with pickle.add oil, aroma is very strong.cool to room temperature and pour over the jackfruit.
  9. Now cover the jar with cloth and pack this tightly into jar.the oil should come above the jackfruit mixture.let the pickle mature for another 2-3 days before you consume it.for all pickles,ensure that it stays covered with oil,that they stays good throughout the year.pickle is ready.
