Instructions to make Khed (Stir-Fried Jackfruit seeds):
- Remove the brown skin of jackfruit seeds & chop in medium size pieces.
- Heat 1 tbsp oil in a pan. Add 1 tsp mustard seeds & let them crackle. Add 1/2 tsp asafoetida, chopped jackfruit seeds, 1/2 cup water and mix. Cover & let the water reduce completely.
- Open the cover & add 1 tsp sugar, salt as per taste, 1 small kokum, 1 cup chopped onion, 1 tbsp chopped coriander leaves, 2 tbsp freshly grated coconut, 1 tsp red chilli powder and saute well. Remove from flame & serve hot with roti/chapati.
