  1. Get 1&1/2 cup wheat flour
  2. Make ready 1 cup Jaggery (grated)
  3. Get 1/2 cup oil
  4. Take 1 cup milk (at room temperature)
  5. Get 1 tbsp lemon juice
  6. Take 1 tsp baking powder
  7. Prepare 1/2 tsp baking soda
  8. Take 1/2 tsp Cardamom powder
  9. Prepare 3 tbsp chopped almonds
Steps to make Whole Wheat Jaggery Loaf:
  1. Take 3/4 cup milk and add lemon juice in it. Mix it well and keep aside for 10 min. After 10 min milk is curdled and converted into buttermilk.
  2. Now take loaf mould place parchment paper and grease it keep aside.
  3. Now mix wheat flour, baking powder and baking soda and sieve it twice. - In a separate mixing bowl take jaggery and add oil in it. Mix it well and break the jaggery lumps. Now add prepared buttermilk in the mixture and mix it until jaggery melts completely. Now add dry ingredients mixture in it and give it a good mix. Adjust the batter consistency by remaining milk. It should be in pouring consistency. At last add Cardamom powder and almonds in it.
  4. Pour the batter in the greased loaf mould and garnish with some almonds on it.
  5. Put the mould in a preheated kadai(I have used salt in kadai) close the lid and bake it for 25 - 30 min on low flame. Check it by inserting knife in it, if come out clean than it's done otherwise back it for 2-5 min more. After that take out the mould and let it cool down to the room temperature. Take a knife and run it along the edges of mould to loose the cake and carefully demould it on a plate. Your delicious cake is ready to serve. Serve fresh it is too much delicious.
