Steps to make Cheese & Onion pie:
- Sift flour & salt into a bowl
- Add the lard & butter to the flour & rub in with your fingertips until the mixture resembles breadcrumbs
- Add tablespoons of the water until the mixture comes together to form a dough. Wrap the dough in clingfilm & chill in the fridge for 30 mins
- Preheat the oven to 180
- Grate the cheese and the onions into a bowl, add salt & pepper & mix
- Take out the dough and roughly split it in half. Grease a pie tin & roll out the first piece of dough. Roll this a little bigger than the tin & then place on the bottom of the tin
- Add the cheese & onion mixture to the pie
- Roll out the left over pastry, the size of the tin. Take the egg yolk and wet the edges of the pastry in tin
- Put the pastry on top of the pie. Push down the edges with a fork
- Brush the egg yolk all over the top of the pie, add pastry leaves & make 3 slits in the pie
- Place in the oven for 25/30 mins
- Enjoy hot or cold!
