The ingredients needed to make Jaggery Bitter Gourd:
- Take 3 cups Bitter gourd pieces
- Take to taste Salt
- Prepare 2-3 Tbsp oil
- Make ready 1/2 tsp Cumin seeds
- Make ready 1/2 tsp Asafoetida
- Take 1/4 tsp Turmeric powder
- Make ready 2 tbsp chopped coriander
- Get 3 tbsp Sesame seeds
- Prepare 1 tbsp coriander powder
- Take 1/2 tsp Cumin Powder
- Take 1 tsp Red chilli powder
- Prepare 2 tbsp Jaggery
- Take 1/2 tsp Amchur powder
Add the ground paste, tamarind juice, jaggery and salt. Adding jaggery, sauting bitter gourd in oil before cooking or soaking bittergourd in curd for sometime helps to reduce the bitterness. But we like to have it as such as the bitter taste is healthy for stomach. Palm jaggery is known for its health benefits and is supposed to be more healthy than cane jaggery.
Instructions to make Jaggery Bitter Gourd:
- Scrape the rough skin of the bitter gourd and remove the seeds.
- Cut them into rings.
- Mix 1 tsp salt to the bitter gourd pieces and set aside for at least 15 minutes.
- After 15 minutes, squeeze out the excess liquid.
- Heat oil in a non-stick pan over medium heat and add cumin seeds.
- When the seeds crackle, add the asafoetida, turmeric powder and saute on a medium heat for 30 seconds.
- Add the squeezed bitter gourd pieces and mix well.
- Cover with a lid and cook on low heat for 8 to 10 minutes check it.
- Cover with a lid and cook over medium heat for another 10 minutes.
- Add chopped coriander sesame seeds.
- Add the coriander powder, cumin powder, red chilli powder, sugar and dried mango powder.
- Mix well and cook over medium heat for another 3 to 4 minutes.
- Serve hot garnished with coriander.
A lot of Mangalorean recipes call for the palm jaggery, especially the post natal ones.
