The ingredients needed to make Wheat and Jaggery Dosa:
- Make ready 2 1/2 Cups Wheat Flour/ Atta
- Prepare 3/4 Cup Pounded Jaggery
- Take 1 Egg
- Make ready Pinch Salt

- Prepare As required Oil for frying
Instructions to make Wheat and Jaggery Dosa:
- Soak the Jaggery in a cup of water for 5 min and then slowly press the hard lumps with your hand to make it dissolve in the water.
- Add the egg,salt to the Jaggery water and whisk it to a light foam.
- Add the flour while whisking the mixture.Add water for the desired consistency and make a smooth paste without lumps. For the consistency of the batter, check the pic below.It shouldn't be too thick or too thin.
- Now heat a pan or tawa on the Stove, once it's hot enough - reduce the flame to medium. Brush your pan with oil or sprinkle a few drops of oil and pour the batter for dosa. Do not spread it like a regular Dosa, spread a little to the sides, add a few drops of oil and let it cook till the wetness is gone.Then turn it over for 1/2 minute gently pressing the dosa and take it off the heat.
- Keep making Dosas on medium heat because they get burnt easily.
- Another quick item with the same recipe is to keep the batter a little thick and make sweet Paddus :) Have fun experimenting!!
